Winemaker
Theo Coles began The Hermit Ram after discovering a tiny limestone vineyard in Canterbury in 2012. Making wine from it led him to seek out other small sites and build lasting relationships with their growers.
He works with skin fermentation, amphora and older barrels, often blending red and white grapes. These methods give his wines texture and a savoury character alongside New Zealand's naturally bright fruit.
Wine
Salty White combines Sauvignon Blanc, Pinot Blanc and Riesling. Whole-bunch fermentation and ageing in stainless steel, amphora and untopped barrels give the finished blend its different layers.
Citrus and floral detail, with a savoury, saline edge and a rounded texture. This has more to explore than a simple fruit-led white, while remaining easy to return to.
Origin
North Canterbury's vineyard landscape includes river gravels and limestone-derived clays on the hills. Sunny days allow flavour to develop, while cooler nights preserve acidity.
