Vincent Caillé is the fifth generation at Le Fay d'Homme. His long commitment to organic and biodynamic growing has helped demonstrate what careful farming can achieve in the Atlantic conditions around Nantes.

Wine
X Bulles uses the ancestral method: the grapes' own sugar creates the bubbles, before the bottles are disgorged. Melon de Bourgogne, Chardonnay and Côt form the blend. Light red fruit, citrus and a lively, dry palate. The blend gives both delicacy and enough fruit to make the wine feel welcoming. Open for an aperitif, fried fish or a few slices of pâté rather than saving it only for celebrations.

Origin
Monnières sits at the Atlantic end of the Loire, southeast of Nantes. Gneiss, gabbro and related metamorphic rocks form a varied vineyard landscape around Muscadet. The ocean-influenced season helps retain the acidity that gives the sparkling blend its fresh backbone.
