Alain Mathias founded the family estate; Bastien and Carole now continue its work across Chablis and Épineuil. Organic farming grew out of Alain's early trials without herbicides, with healthy vines remaining the starting point.

Wine
Chardonnay with the cool outline of Chablis: citrus, orchard fruit and a firm, chalky finish. The fruit has presence, while the acidity draws a clean line through it. Pour with oysters, roast chicken or a fish pie that wants something fresh alongside.

Origin
Northern Burgundy's limestone and marl are fundamental to Chablis. The domaine's vineyards sit within this old marine landscape, where the relatively cool growing season helps Chardonnay retain the freshness that defines the appellation.
