AbstractBerry, floral, supple
Higher vineyards and gentle extraction give a lighter, more delicate expression of Navarra's Garnacha.
Winemaker
Jon Aseginolaza and Pedro Leunda are childhood friends from San Sebastián and environmental biologists. Their first vineyard, Santa Zita, came into their hands in 2016: a small parcel of old Garnacha near San Martín de Unx.
They restore old, often neglected vineyards in Navarra, working by hand from pruning to harvest. The vines are dry-farmed, fed with organic compost and grown without herbicides or systemic pesticides. Their farming is organic, without certification.
Wine
Birak 2024 blends 85% Garnacha with 15% Tempranillo from old, unirrigated vineyards in Olite and Dicastillo. The grapes are picked by hand and fully destemmed, then fermented with native yeasts in stainless steel.
Three months in steel are followed by three months in old French oak. Short daily pump-overs during fermentation give gentle extraction; the wine settles naturally and is lightly filtered before bottling, with a small addition of sulphur.
This is the lighter, youthful side of their range: bright red fruit, floral notes and a little spice. The short ageing keeps the fruit at the centre.
Origin
Two parts of Navarra contribute to Birak. Olite's southwest-facing vines sit at 400 metres, trained on a double cordon. Dicastillo's south-facing bush vines grow at 490 metres. Both sites have calcareous clay soils and rely on rainfall rather than irrigation.
