Guillaume Reynouard’s bought the 10 hectare domaine (founded in 1687) in the heart of the village of Puy Notre Dame, one of the most famous in the Saumur AOC, in 1996. He added 4 hectares in 1998 and converting them all to organic viticulture 2001 wishing to work the soils around his village of Puy Notre Dame, by hand, and with the ecology of his surroundings in mind. Naturally he turned to Demeter, and by 2010, all his vines, plus a further 4 more hectares of Cabernet Franc purchased in 2011 were certified as biodynamic.
The vineyards are planted with Cabernet Franc, Cabernet Sauvignon, 20% of which is permitted in Saumur Puy Notre Dame AOC wines, Grolleau, Pineau D’Aunis and Chenin Blanc. His two vineyards, Pierre aux Feu where an ferric band runs through the limestone soil, and l’Enchentoir, which is the oldest parcel and perhaps the most famous in the AOC, produce his Haut Gamme wines, classical in poise and age worthy in nature, often raised in oak and without additional SO2.
Guillaume also producers the most delicious wines for earlier drinking, from Cabernet Franc, Chenin, Grolleau Gris and Pineau d’Aunis. The wines are lively, fresh and elegant, representing the best of the terroir and variety.
80% Cabernet Franc, 20% Chenin Blanc. Pet Nat sparkling wine. Fermentation begins with native yeasts in vats, then transferred to bottles to continue for approximately 10 months.
