Slobodne (‘the free winery’) are a young and dynamic family-run winery focusing on natural expressions of their local grapes and their very own terroir. They are working on the same historic estate that once belonged to older generations of their family and that was recovered in the early 90’s following the tragic combination of WWII and then 40 years of communism in the region. The family have spent the last 25+ years rebuilding the ecosystem of the farm and eventually launched Slobodne in 2010. Eight years on, they are at the forefront of the natural wine movement in Slovakia and currently craft some of the most distinct wines in Europe.
50% Gruner Veltliner, 50% Sauvignon Blanc, fermented with wild hops
All of the grapes are estate-grown in their village of Zemianske Sady. Their 17 hectares of vines are a small part of their 350ha farm, where they tend livestock and also grow poppies, barley, wheat, rapeseed, and more. 2017 was a very strong vintage. They avoided the frosts and rains that plagued the 2016 vintage in their region. Ideal ripening conditions, good yields, less treatments needed and very healthy grapes with good concentration.
The grapes were destemmed and fermented on the skins for 7 days.
After pressing the wine was returned to vats and finished fermentation with the addition of wild hops that had been picked from their own forest. The hops were then removed and the wine was aged in steel tanks for only a couple of months before bottling. Unfined, unfiltered, tiny sulphite addition.
