AbstractBlackberry, thyme, structured
A mature blend of Grenache, Syrah and Cabernet Sauvignon from limestone beneath the Alpilles.
Winemaker
Dominique Hauvette left her work as a lawyer in the Savoie and moved to Provence. An interest in horses brought her to the countryside near Saint-Rémy; she studied oenology and established her vineyards beneath the Alpilles.
She farms biodynamically on limestone ground. Her wines are given time in the cellar before release, retaining both the ripe fruit of Provence and the firm structure needed to age.
Wine
Cornaline combines Grenache, Syrah and Cabernet Sauvignon.
Dark berries, thyme and a savoury, finely structured palate. The 2019 has the warmth expected of Provence, with enough definition to keep it composed.
Origin
The Alpilles' limestone landscape surrounds the domaine near Saint-Rémy-de-Provence. Mediterranean heat ripens the grapes, while the mistral brings dry air through the vineyards.
