AbstractBlackberry, herbal, grippy
Garnacha and Carignan from family parcels on Priorat's slate hills, with the depth for slow-cooked food.
Winemaker
The Aixalà and Alcait family has grown vines around Torroja del Priorat since the 1980s. In 2005 they began making their own wines with a small release of Pardelasses.
The work remains a family project, from vineyard to label. They farm organically on slate, growing Garnacha and Carignan on demanding hillsides. These established local varieties supply the naturally concentrated fruit for their reds.
Wine
Garnacha and Carignan share the Pardelasses blend, with ageing allowing the fruit to settle into a more structured wine.
Dark berries and herbs, with a firm mineral grip and a warm, sustained finish. The wine has substance, so give it air and food with equal depth.
Lamb, braised meat or a richly cooked vegetable dish will work well.
Origin
Priorat's broken slate, known as llicorella, is an important part of these vineyards.
