Primož Lavrenčič's Burja project puts Vipava's local grapes at the centre of the estate. Organic and biodynamic vineyard work supports his commitment to the area's agricultural heritage.

Wine
Zelen is a local Vipava variety, with a distinctive herbal character. Yellow fruit, herbs and a light, savoury grip. The wine is dry and fresh, with texture giving the flavours somewhere to settle. Drink with grilled vegetables, fish or a vegetable risotto, and leave enough room in the glass for it to unfold.

Origin
The Vipava Valley lies in western Slovenia, between Mediterranean and continental influences. Layers of marl and sandstone, known locally as flysch, form much of the vineyard ground. The strong bora wind and changing temperatures give the local varieties a distinctive growing environment.
