AbstractCitrus, ripe, layered
Estate Chardonnay from the Satos' Pisa hillside farm, developed through native fermentation and barrel ageing.
Winemaker
Yoshiaki and Kyoko Sato worked in international banking before moving into wine. Experience in several regions led them to Central Otago and the aim of farming their own vineyard.
They bought their Pisa hillside farm in 2016, releasing the first La Ferme de Sato wines from 2019. Organic farming, native fermentation and patient ageing underpin the wines. Le Chant du Vent comes from their own Chardonnay blocks.
Wine
Le Chant du Vent combines Chardonnay blocks from the Satos' own farm. Native fermentation and measured barrel ageing give the wine time to develop.
Citrus and yellow fruit, with a layered middle and a firm, fresh finish. The texture is substantial, but the palate remains focused.
Origin
La Ferme de Sato lies on the Pisa slopes in Central Otago. The wider region is shaped by schist, gravel and wind-blown deposits, with a dry continental climate.
