AbstractBerry, dry, frothy
Early-picked Barbera becomes a rosé, then finishes fermenting in bottle for its natural fizz.
Winemaker
Camillo Donati continues the family winegrowing tradition begun by his grandfather, who planted their original vineyard in 1930. The vines grow in the hills near Parma.
Organic farming and natural bottle fermentation underpin the wines. Camillo works with several local varieties, making dry frizzante whose acidity and bubbles suit Emilia's salumi, pasta and rich food. The wines finish fermenting in bottle rather than being given their fizz in a pressurised tank.
Wine
Ribelle begins with Barbera picked early and pressed as a rosé. Natural bottle fermentation turns that fresh base wine into a frizzante.
Red berry fruit and a dry, gently frothing palate. Barbera's acidity gives the bubbles purpose and makes the wine particularly good with food.
Origin
The vineyards lie in the hills of Sant'Andrea di Barbiano near Parma, at around 300 metres. Clay soils and a hillside setting distinguish the site from Emilia's flatter plain.
